显微镜下的黑茶茯砖上的金花菌
1.学术名:冠突散囊菌。
2.起源:源自湖南长沙马王堆出土的一笥茶,迄今已有2300年历史。1953年,湖南安化白沙溪茶厂利用“发花”工艺产制出第一片金花茯砖茶,被日本人松下智称为“神秘丝绸之路的茶”。
3.特征:属冠突散囊菌的金黄色孢子,在砖或饼内形成圆点状颗粒,花体清晰,花间界面清楚,有别于黄曲霉的菌丝体与烟雾状孢子。
4.功能:具泌酶特性,能分泌茶多酚氧化酶、纤维素酶、果胶酶等,利用外源酶使茶多酚氧化缩合、生成茶黄质、茶红质与茶褐质。同时使多糖类及蛋白质水解,使茶汤滋味转趋醇和。
5.茶品特征:
(1)具黄花清香及甜香。
(2)红汤褐叶。
(3)滋味滑顺清甜。
